In the videos, the pocket jets for the cross pockets are cut perpendicular to the grain (I mean the length). Is this only to conserve fabric, and therefore only for unpatterned cloths? Would one match the grain (like for the out-breast) for the jets in the patterned case?

Yeah that’s correct. Stripes go across the jet not through it.
I know this might sound silly but I can sort of imagine a stripe going horizontally on the top of a pocket... Not sure if this would be considered gauche!
