I've been plodding along on my coat and haven't had anymore questions for a while so hopefully I've been doing it correctly!
I'm now up to Episode 12 Canvassing The Forepart and I wanted to check that this looks right with you all before proceeding.
I have matched up the darts with those on the canvas, lined up the top button mark stitch to the notch, made sure the dart is inline with the shoulder point and the break line is laying in the right place.
I seem to have a lot of excess canvas on either side of the shoulder whereas Rory's shoulder on the armhole side meets the edge of the canvas. Is mine correct as it lines up with all the other points on the forepart or does it need some rejigging?

Pretty much in agreement with whats been said above! Once you start canvassing the forepart to the canvas just make sure its all worked out and over in the chest area & dart under lapel. If you feel like there is to much even before canvassing you can shrink some of it away. Take your time doing the canvassing, its one of the most important stages of the entire process.
The excess canvas looks fine to me. I am a bit concerned about the fullness in the cloth at the chest - there's a heck of a lot there... Be careful to smooth that all out when basting to the canvas, or you'll have ugly ripples in the final garment. Are you sure you didn't sew the dart too wide? Maybe it's fine and I'm over-reacting...
I can't tell you about your exact configuration, but it's normal to have excess canvas; there's often some excess at the bottom as well. The process of basting the canvas to the wool shrinks it up a bit. If you started with a piece cut to the exact size of the front it would end up too short. After basting, the excess canvas is trimmed away.
