I think I have too much extra cloth and canvas at the edge to turn this back before the fitting. Should I trim this down and if so how much?

I tend to leave about 1 roughly. Sometimes it can be more or less depending on how much inlay the cutter has left when striking out. Customers sometimes change their minds at fittings and might want a smaller or larger lapel. The more inlay you leave the more you can play around with it.
