I've decided to start again with my pattern as I think there might be some issues with it – following various adjustments, and so on.
I'm wondering which points on the pattern I can / should replace with measurements, and which I should leave as given i.e. scale measurements.
Also, given I established the front balance needed to be reduced with my last coat, is it a good idea to incorporate this into the new pattern, or to start again?

Or you can use the same pattern and just add the adjustments.
You should always use the notes from each fitting to improve your draft for the next coat.
Hi Robbie, To answer your first question. I use the half neck measurement between pt11-0 on the draft. Place your half back measurement across the half back line plus a 3/8" seam. Then use your head unit for the coat length, waistline and sleeve length along the forearm. There are more but too hard to explain outside of the drafting course.
